my favorite summer salad

I clipped this recipe for Pasta Cobb Salad from a circular ad years ago, and its been a family favorite ever since.  It is always a hit with the crowd too.

You will need:

pkg. tri colored spiral noodles

3 boneless, skinless chicken breasts

4 or 5 slices of bacon

3 green onion stems

4 oz.crumbled blue cheese*

grape or cherry tomatoes

8oz. bottle of italian dressing

parsley flakes

Directions:

boil noodles according to package directions

cook bacon until crisp and crumble into pieces

brown chicken breasts til cooked through, cut up into bite sized pieces

slice the green onions

mix together pasta, chicken, bacon pieces, green onions,  and next 3 ingredients.

Chill if desired.  Garnish with parley flakes before serving.

*you can substitute feta cheese for blue cheese if you prefer a milder flavor

  3. Oooh… Delicious! I’ve always thought about doing a “pasta” cobb salad, because we have the original version quite often and love it. But, for some reason, I’ve never given it a go. Now, I have the perfect recipe! Thank you Sharon!
