Mr. Hines and I had so much fun hosting the eighth grade boys from our church youth group this weekend.
One of my responsibilities was to provide breakfast and dinner on Saturday. Homecooked meals are hospitality at its best!
It felt so good to get in the kitchen. If you’ve been following me for any length of time, then you know that to me, my house feels most like home when I’m cooking.
So, what to cook for the boys? I decided on a continental breakfast consisting of a variety of cereal, cinnamon rolls, bacon, eggs, grapes, juice and milk.
And for dinner we had beef tacos, refried beans and chips and salsa.
None of it was complicated, but I do want to share my taco seasoning with you today.
Homemade Taco Seasoning:
Salt & Pepper to taste
dash of ground red pepper
2 tsp of mexican oregano flakes
1 Tbsp of cumin powder
2 Tbsp of chili powder
Stir into browned meat and mix well.
And here are a few tips on cooking perfect scrambled eggs:
~for extra flavor, use about a Tbsp of bacon grease or butter to coat the pan
~add a Tbsp of milk per egg for fluffy eggs
~cook slowly over medium low heat
~The outside and bottom of the egg mixture will start to cook first. Use a wide spatula to keep the bottom of the eggs from sticking to the pan and to push the edges into middle of the pan, allowing the liquid from the center of the pan to flow out.
~continue doing this until there is no moisture left and serve.
