You’ve got a meal plan and everything on hand, but you lack the energy to make it happen. Do you ever have those nights? I did last night. I was just too dang tired to cook, but it was 5:30 p.m., and I needed to figure something out, quick. I was about to give in to the temptation to eat out when I remembered one of my quick, go-to meals. Fajitas.

I had everything at home except the meat. No problem. I was already in Wal-Mart. So, I rolled my cart over to the meat department and picked up two bags of John Soules cooked fajita beef. I decided on “charro” beans for a side dish. This particular recipe is nothing more than a can of pinto beans mixed with a can of rotel.

Dump two cans together and heat up some meat. That’s all you do. You can saute some onions to compliment the meal if you wish. ( I do. )

Set out some guacamole, cheese, sour cream or whatever you prefer. Then, warm up the tortillas and serve.

tip: wrap tortillas in a damp paper towel to keep them from crumbling.

    What? Where was my invitation to such a lovely looking, yet simplistic dinner? – lol. This is going in my recipe fbook for my “don’t feel up to cooking night.” It sounds so much better than eggs or a quck bowl of cereal, oatmeal, etc.
