“So, this is pretty much a normal day for y’all?”  Our friend asked.  To which my husband replied,  ”there’s not a normal day around here.”

But, setting up a miniature photography studio on the kitchen island while cooking is my normal.  I wasn’t going to let another opportunity to share the perfect baked potatoes with you escape me.   And besides, we were making a special dinner.

Now, put that foil away, ’cause you won’t need it.

the perfect baked potato

Prep time 10 minutes
Cook time 45 minutes
Total time 55 minutes

The skins will be perfeclty crisp with a fluffy inside.

Ingredients

  • 5oz russet baking potatoes (1 potato per person, about 5 ounces per potato)
  • olive oil (enough to coat each potato)
  • course sea salt (enough to coat each potato)

Note

You will want to lay foil down on the bottom of your oven to protect it from the drippings.

Directions

Step 1
wash potatoes

pierce both sides of the potatoes, 3 or 4 piercings per side

coat potatoes in olive oil

roll potatoes in sea salt

place directly on middle rack in a 400 degree oven
Step 6
bake for 45 minutes

 

Pair that hot potato with a juicy steak, and you’ve got a meal worthy of a bigger than life T.V. character.  Last night’s episode of the new “Dallas” was a very memorable tribute to both the actor, Larry Hagman and the character of J.R. Ewing.  And now, we’re left with the question that plagued the nation so many years ago, “who shot J.R.?”

  2. I haven’t done baked potatoes in the oven in years. I always do them in the microwave! I will try your method next time though and see if we can tell the difference:):) XO, Pinky

  3. i usually bake potatoes on the microwave…but they are much better in the oven as I love how the skin of the potato is “crispy”….great tips Sharon!!
