My go to meals weren’t quite hitting the spot when Mr. Hines and I were newlyweds. So, I asked my Mother-in-Law to jot down some of her recipes for me.
Lately, I’ve been using her Spanish Rice recipe that she penned all those years ago. It is a big hit with family and friends alike. And it goes really well with my beef enchiladas.
|Prep time||5 minutes|
|Cook time||15 minutes|
|Total time||20 minutes|
|Meal type||Side Dish|
- 1 cup long grain rice
- 8oz tomato sauce
- 1 tablespoon cumin powder
- 2 cups water
- 2 tablespoons butter
|saute rice in butter for 3 - 5 minutes, stirring occasionally|
|add tomato sauce, cumin powder and water|
|cover and simmer for about 15 minutes or until water is absorbed|
|Let stand 10 minutes|
|Fluff rice and salt to taste|
