I don’t think I’ve ever told you that a few years ago, I was diagnosed with an insensitivity to gluten.
People often ask, “what is gluten?”
It is a protein found in wheat, barley and rye. It is also used as a thickener in sauces and soups.
I had been craving warm cookies and milk, when I stumbled upon a simple recipe for Peanut Butter Cookies from All Things Heart and Home.
They are naturally gluten-free. So, I immediately pinned the recipe to my “desserts to good to pass up” board on Pinterest.
It wasn’t long before my daughter and I got to baking, following Robin’s recipe…
Peanut Butter Cookies
|Prep time||7 minutes|
|Cook time||8 minutes|
|Total time||15 minutes|

- 1 cup peanut butter (we use natural peanut butter)
- 1 cup brown sugar
- 1 egg
1) If a recipe doesn't specify, use light brown sugar.
2) Unless the recipe says otherwise, use a large egg.
|Combine all ingredients and mix until smooth|
|drop by spoonfuls onto cookie sheet and flatten|
|Bake at 350 for 6 - 8 minutes, or until lightly browned|
They are so good warm, right out of the oven. You can even make them with chocolate chips!
