Thinking back on it fills me with contentedness;
my parents working alongside me to make the warm spinach salad; Dad helping me drain off the hot bacon grease, making sure to reserve just enough for the warm vinaigrette dressing,
As I called out the measurements, Dad held the tablespoon or teaspoon while I measured and poured. Together we added the vinegar, sugar, mustard and salt and pepper to the bacon drippings, whisking it with a fork.
While he tended to the dressing, I grabbed the baby spinach out of the refrigerator. Mom held the bowl while I filled it with spinach. We gradually poured the warm dressing over the spinach, tossing it in and adding more spinach as the warm dressing wilted it ever so slightly.
I left it up to Mom to tell me when she thought we had enough spinach. Then we garnished the salad with purple onion, sliced eggs and fresh bacon bits.
As we finished preparing the salad, the rest of the family arrived.
After lots of hellos and hugs and munching over appetizers, we eventually grabbed our dinner plates and lined up around the buffet, filling our plates with red beans and rice with sausage, cornbread, sautéed squash and of course, warm spinach salad.
A good ol’ fashioned southern meal.
Admittedly, this was the first time I’d ever made the salad. I’m one of those people who will try a recipe for the first time when cooking for company.
This time wasn’t much of a gamble though because I’d had the salad before. And the recipe is super easy.
Warm Spinach Salad
|Prep time||20 minutes|
|Meal type||Lunch, Salad|
- 1 package of baby spinach
- 8 slices of bacon
- 2 hardboiled eggs (peeled and sliced)
- 1 small red onion (thinly sliced)
- 3 tablespoons red wine vinegar ( or balsamic vinegar )
- 2 teaspoons sugar
- 1/2 teaspoon dijon mustard
- salt and pepper
|Cook bacon until crisp; remove from grease and drain on paper towels. When cool, crumble into pieces.|
|Reserve at least 2T of bacon grease with drippings in skillet|
|Add vinegar, sugar, mustard and salt & pepper to drippings. Mix well.|
|Pour spinach in bowl.|
|Pour warm dressing over spinach.|
|Garnish with eggs, bacon and onion|
It was so satisfying watching everyone enjoy their meal, complimenting it with each first bite.
