Sweet potato casserole.
It’s hard to believe that something that looks kinda gross can taste so good. But it does.
Not the kind with a blanket of melted marshmallows covering it.
No, I’m talking about the way momma makes it, with a streusel topping. Any time you mix butter and sugar together you’re onto something good.
The streusel really brings out the flavors of the casserole without overpowering it.

- 3-4 medium sweet potatoes
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 -1 teaspoon pumpkin pie spice
- 1/3 cup milk
- 1/4 cup butter (softened)
- 1/3 cup brown sugar
- 1/4 cup flour
- 2 tablespoons butter (might need more)
|wash and cut off pointed ends of potatoes|
|cover with water and boil til tender|
|cool and peel (peels with come off easily)|
|mash potatoes in bowl|
|add sugar, eggs, vanilla, pumpkin pie spice, milk and butter|
|mix ingredients together on medium until smooth|
|spoon into greased 13 x 9 pan|
|to make streusel, use fork to blend brown sugar, flour and butter until crumbly|
|sprinkle streusel over casserole|
|bake at 350 degrees for 30 minutes or until hot and bubbly.|
I’m not sure where the recipe came from, but we’ve been making it this way for as long as I can remember. I hope you enjoy it as much as my family does.
